About Us
The Mamas and the Papas BBQ Team (EST. 2010) is a BBQ Catering and Competition Team. Our team consists of two families who share a passion for good food, good friends and good times. The Head Cooks are Paul Carnell and Clarence (CJ) Joseph.
We are retired military veterans who met while serving in the Army in 1994. Since then, our families have shared countless backyard cook-outs. Always present at these backyard events was the friendly trash talking about which one of us was the better GRILL SERGEANT. This argument continues today and will probably never be settled (shhh, it's me).
For years friends and family have been telling us how good our food was. We always reminded ourselves, however, that they were eating for free; what else were they going to say? Finally, while bringing in the 2010 New Year together, we kicked around the idea of entering the world of Competition BBQ. We entered our first competition in April 2010. The learning curve was steep but we walked away with a 10th place finish out of 52 teams. We were on top of the world.
Three competitions and 10 awards later, we offered our services to an engagement party being held for a relative. We fed over 100 guests. Our food received rave reviews with multiple requests for our business card. The guests thought we were a catering service. After hearing "you should be in the catering business because this is the best bbq I've ever tasted" one too many times, we decided to launch the Mamas and the Papas BBQ Catering and Competition Team.
Award winning BBQ: How do we do it?
We are proud to be able to say that all our recipes have been chosen as some of the best by competition certified judges. All our meats are slow cooked by hardwood fires on the very same pits that we use during competitions. This ensures an authentic top quality Texas-style barbeque. Each meat is rubbed ahead of time with a different spice blend that enhances its natural flavor. When slow cooked, this spice blend produces a succulent crust (Bark) that can only be produced by this method of cooking. This slow-smoking method of cooking results in meat that is flavorful, juicy, and very tender.
